The Hays House
was built in 1857 by the towns founder, Seth Hays, and
is known as the oldest continuous restaurant west of the
Mississippi. In the early years, the building was
used as a mail distribution point, district court, a
place for church services and the site for publication
of an early newspaper. Today the Hays House is
known as one of the finest restaurants in Kansas.
